A Clever Blend of Grape Varieties at the Heart of the Terroir

Blending is a crucial step in the production of Banyuls. Jauffrey Canier, the cellar master, and his teams carefully select the grape varieties and plots that will make up each vintage, seeking to best express the unique characteristics of the terroir and to achieve the perfect balance between the different aromas and textures.

Traditional grape varieties such as Grenache noir, Grenache gris, Grenache blanc, Carignan, and Mourvèdre are meticulously blended to create wines that combine power, elegance, and complexity. Each grape variety brings its own unique contribution, adding layers of flavor and subtle nuances to the whole.

The Art of Balance and Harmony

The blending of Banyuls is a real balancing act, where each component is carefully measured to create a harmonious and balanced wine. The grape varieties are selected according to their maturity, tannic structure and aromatic potential, then precisely assembled to create wines that captivate the senses from the first sip.

The wines resulting from this art of blending are distinguished by their depth, complexity and length in the mouth. Each vintage tells a unique story, revealing the subtleties of the terroir and the expertise of the artisans who created them.

To age these Banyuls and Banyuls Grand Cru, the cellar master has several ageing cellars and a wide variety of vats, tuns and barrels. All these pieces of wood are very old, each one is unique and carries the memory of all the Banyuls vintages that it has housed.

Every year at the end of winter, the cellar master prepares the blends of different vintages. It is as if he had a painter's palette at his disposal. Each piece of wood offers its nuances and character. He then benefits from all the work of the aging. For certain non-vintage vintages, he blends wines from several years, while for the Banyuls Grands Crus and the Prestige vintages, the blend of a more sophisticated vintage is made from around twenty or even thirty vats.
