Rabbit sautéed with lovage

Ingredients :

1 beautiful rabbit cut into pieces;
6 shallots;
3 cloves of garlic ;
1 large bunch of lovage (or celery leaves);
50 g of butter;
20 cl of Collioure Blanc Les Schistes de Valbonne;
salt pepper.

Recipe :

In a casserole dish, brown the rabbit pieces in the butter;
Finely chop the garlic and shallots and sprinkle them over the rabbit;
Add salt and pepper and cook for 5 minutes;
Insert three quarters of the lovage cut with scissors and sprinkle with flour before returning the whole thing to the heat for 5 minutes;
Then add the wine and cover as soon as it boils;
Let simmer gently;
Before serving, sprinkle again with fresh lovage.
