Collioure Blanc The Schists of Valbonne
Ingredients :
1 chicken of around 1.5 kg cut into small pieces;
2 tbsp. to s. of flour ;
1 C. to c. paprika flakes;
7 cl of olive oil;
20 cloves of garlic, unpeeled, but lightly crushed with the back of a knife;
15 cl of dry Rancio;
1 C. to s. chopped parsley;
fleur de sel and pepper.
Recipe :
- In a salad bowl, mix the flour, salt, pepper and paprika;
- Add the chicken pieces and stir to cover all the pieces well;
- In a large pan, fry the garlic in hot oil for a few minutes, remove it and set it aside;
- Brown the chicken in the same pan until browned;
- Add the garlic again and continue cooking for 5 more minutes, turning the chicken so that it is nicely browned;
- Pour in the Rancio and bring to the boil;
- Let simmer for 35 minutes;
- Sprinkle with chopped parsley and serve hot.
