Terroir
The Collioure and Banyuls Vineyard is located in the far south of France at the meeting point between the Pyrenees and the Mediterranean, under the midday sun. The vines are planted on terraces on shale hillsides, from the seaside to the bottom of the valleys of the hinterland.
Grape varieties
Black Grenache: 100%
Winemaking / Aging
Harvest destemmed and crushed with maceration for 20 days after mutating on the grains.
Aged for 30 months in small 225 liter oak barrels.
Refining in bottles for a minimum of 6 years in an underground cellar.
Made only in great vintages.
Tasting
Color: Intense and deep mahogany color.
Nose: Undergrowth, prunes, vanilla and wax. Stirring reveals cocoa, ground black pepper and leather.
Mouth: At once intense, vinous and round, slightly woody in a world of prune and cocoa.
How to appreciate it
Service: Serve between 15° and 16°C.
Pairings: To be enjoyed with semi-cooked or pan-fried foie gras. Also with a caramel heart chocolate fondant decorated with some fresh red fruits. You can also enjoy it after coffee.
Degrees: 16.5% vol.
