The Collioure and Banyuls vineyards are located at the extreme
south of France at the meeting point between the Pyrenees and the Mediterranean. It is on this mountain vineyard that Terres des Templiers creates, from certain selected plots, vintages with a unique character, produced using “organic farming”.

Mourvèdre: 50%
Grenache Noir: 50%

Two plots on the heights of the village of Banyuls-sur-Mer are at the origin of this Collioure Rouge Bio. A rather flat one of Mourvèdre on which the work of the soil is mechanized. Another on terrace for the Grenache Noir, worked entirely by hand. It is an experimental plot which implements different techniques of low walls and fight against erosion. Traditional vinification with a maceration of the
30-day grapes. Aged for less than a year in 1 and 2 wine barrels before bottling.

Color: Pretty intense cherry red color with purple highlights.
Nose: First nose of black cherry with notes of thyme. When swirled the wine reveals blackberry, sage and vanilla.
Palate: Round and fleshy with delicate tannins, the "juicy" character of this wine wonderfully expresses the black berries.

Service: Serve around 14°C. Ideally uncork 30
minutes before service.
Pairings: While characterful charcuterie and pasta dishes will be good companions, this Collioure Rouge will easily accompany a veal chop with cream and mushrooms.
