The Collioure and Banyuls Vineyard is located in the far south of France at the meeting point between the Pyrenees and the Mediterranean, under the midday sun. The vines are planted on terraces on shale hillsides, from the seaside to the bottom of the valleys of the hinterland.

Black Grenache: 100%

Harvest of over-ripe grapes. Destemming, crushing. Mutation on grains followed by a long maceration of 20 days. Aged for 12 years in small tuns and demi-muids then refined in bottles in an underground cellar.
Depending on the assessment of the cellar master, certain vintages may not be produced.

Color: Moderately deep mahogany color, fringe of a pretty tawny brown.
Nose: First nose of roasted coffee, café crème and praline. Agitation brings remarkable aromatic complexity: dried fig, blond tobacco and candied orange peel.
Mouth: Creamy and distinguished at the same time, the deliciousness of coffee and caramel go well together. A very long persistence prolongs the pleasure with the noble bitterness of black cocoa.

Service: Serve between 15 and 16°C.
Pairings: A meditation wine par excellence accompanied by a coffee or a cigar, it will enhance a pan-fried foie gras or a walnut cake.
