Terroir
The Collioure and Banyuls Vineyard is located in the far south of France at the meeting point between the Pyrenees and the Mediterranean, under the midday sun. The vines are planted on terraces on shale hillsides, from the seaside to the bottom of the valleys of the hinterland.
Grape varieties
Grenache Gray and White: 100%
Winemaking / Aging
Destemmed and crushed harvest. Mutage on must. Oxidative aging for an average of 6 years in wooden vats and tuns delivering “their aromatic memory” thanks to a system close to the solera method.
Tasting
Color: Amber, coppery, red.
Nose: First nose of gentian, with the agitation of dried fruits (figs, dates...) with notes of nuts, beeswax and medlar.
Taste: Explosive and delicious, round and delicate highlighting its rancio (fresh nut) character. Very nice, long finish.
How to appreciate it
Serving: To be enjoyed around 10°C.
Pairings: For dessert with a tarte tatin, a white fruit crumble or a “mel y mato” (honey and fresh cheese).
Degrees: 15.5% vol.
Allergens: Sulphites
