The Collioure and Banyuls Vineyard is located in the far south of France at the meeting point between the Pyrenees and the Mediterranean, under the midday sun. The vines are planted on terraces on shale hillsides, from the seaside to the bottom of the valleys of the hinterland.

Mourvèdre: 90%
Grenache noir: 10%

Harvest destemmed and crushed.
Long maceration of 30 days. Aging in new oak barrels, 1 wine and 2 wines for 12 months.

Color: Medium-toned, cherry red.
Nose: Initial nose of red plum and smoke. Upon swirling, blackberry is accompanied by black pepper with notes of camphor and iodine.
Palate: Round and smooth, the fruit is supported by a toasted oak. A nice acidity accompanies the flaky tannins of the Mourvèdre.

Service: Serve around 15°C. Open 30 minutes before serving for full aromatic expression.
Pairings: To be eaten with rare red meats (Rossini beef steak) or in sauce. In a few years, on stew game.
