The Premium Approach requires a strict commitment from winegrowers using the old Cru de Collioure vines. The precise work carried out in the vineyard and in the cellar gives rise to exceptional wines.

Syrah: 45%
Mourvèdre: 25%
Black Grenache: 25%
Carignan: 5%

Selective sorting on the plot and in the cellar. Cold pre-fermentation maceration for 5 days and post-fermentation for more than 30 days depending on the grape variety. Aging on lees in new oak barrels (25%) and 1 wine barrels (25%), the rest of the blend being aged in stainless steel vats.

Color: Deep cherry red with purple fringe.
Nose: Intense and fresh fruitiness of cherry and blackberry with notes of toast. Stirring reveals spices like black pepper, hints of vanilla and freshly ground coffee.
Mouth: Energetic, full of freshness highlighting red fruits.

Service: Serve at 16°C and uncork 10 minutes before serving.
Pairings: To be combined with noble dishes: condimented steak tartare, fine cuts of meat, game....at your pleasure.
