The Cru Vineyard of Collioure and Banyuls is located in the far south of France at the meeting point between the Pyrenees and the Mediterranean, under the midday sun. The vines are planted on terraces on shale hillsides, from the seaside to the bottom of the valleys of the hinterland.

Carignan: 70%
Grenache Noir: 30%

Harvest destemmed and crushed. Traditional 30-day maceration. Storage in perfectly oiled vats until bottling.

Dress: Deep cherry red with tiled fringe.
Nose: First nose of peat, iodine and sweet vanilla. A
the agitation the nose explodes on notes of cherry, plum
red, licorice and aromatic herbs with a hint
of minty freshness.
Palate: Round, typical and fruity (redcurrant) with a very
beautiful acidity synonymous with freshness and lively tannins which
will echo a spicy dish.

Service: Serve around 14°C. Decant just before serving.
Pairings: Baked rabbit, pan-fried porcini mushrooms or chanterelles accompanying, for example, a veal chop. This is an opportunity for you to test different peppers and spices in your cooking.
