Terroir
The Collioure and Banyuls Vineyard is located in the far south of France at the meeting point between the Pyrenees and the Mediterranean, under the midday sun. The vines are planted on terraces on shale hillsides, from the seaside to the bottom of the valleys of the hinterland.

Winemaking / Aging
The delicate work of our cellar master on our vinegars is to succeed in trapping in them all the aromas developed by the oxidation of the Grands Traditionnels Banyuls. This aromatic evolution of Banyuls takes place slowly during aging for 4 years in demi-muids outdoors and in vats indoors. Next comes the acetification of the vinegar and then aging in oak barrels as vinegar for at least a year in the cellar of our vinegar factory in order to perfect its aromatic palette. Each time it is bottled, a blend is therefore made from barrels matured.
Tasting
Color: Very beautiful red color, shiny with copper and amber reflections.
Nose: Complex and powerful with gingerbread, vanilla, fresh walnuts and currants.
Mouth: Combining power, sweetness and freshness. Very aromatic finish.
How to appreciate it
Pairing: Season mixed greens and grilled vegetables. Surprising in marinade, it adds character to sauces and deglazing.
Degrees: 7° ACET.
