This Côtes du Roussillon comes from the north-east of the Pyrénées-Orientales department, more precisely on the left bank of the Agly valley near the small village of Baixas. This terroir of limestone and schist differs from the terroir of Collioure and Banyuls by its low altitude and its distance from the Mediterranean Sea.

Grenache Noir: 40%
Syrah: 40%
Mourvèdre: 20%

The 3 grape varieties are vinified traditionally in destemmed/crushed with short macerations to favor the fruit over the tannic structure in the mouth. Aged in stainless steel vats topped up until bottling.

Dress: Deep bright red tending towards violet.
Nose: Very ripe red fruits (strawberry, raspberry). When swirled the fruit becomes darker (blackberry) with notes of orange juice and star anise.
Palate: Round and smooth at the same time, highlighting the fruits of the nose.

Service: Uncork at the time of serving at around 14°C.
Pairings: This wine, made with fruit, will accompany terrines and pâtés en croûte, grilled meats and soft cheeses with bloomy rinds.
