The Premium Approach requires a strict commitment from winegrowers using the old Cru de Collioure vines. The precise work carried out in the vineyard and in the cellar gives rise to exceptional wines.

Grenache Gris: 100%

Manual harvest. Sorting at the plot and on the reception table. Only the noble juice from the "heart of the press" was selected. After a light cold settling, slow fermentation in new oak demi-muids. Conservation on fine lees in the same perfectly topped wooden pieces, regular stirring until December 2023. Bottling in April 2024.

Color: Intense and sparkling golden yellow.
Nose: First nose of lime blossom, fresh apricot and toast. The fruits explode upon aeration (pear, white peach) with spicy notes like curry.
Palate: Tasty and round with a lot of deliciousness. Orchard fruits rub shoulders with grilled and toasted notes. A nice acidity in the finish lengthens the palate with a lot of freshness.

Service: Serve when young between 10°C and 12°C. Decant 15 minutes before serving.
Pairings: It goes very well with Asian dishes, cod or spicy veal blanquette. You should also try it with fresh goat cheese.
