The Collioure and Banyuls Vineyard is located in the far south of France at the meeting point between the Pyrenees and the Mediterranean, under the midday sun. The vines are planted on terraces on shale hillsides, from the seaside to the bottom of the valleys of the hinterland.

Mourvèdre: 90%
Grenache noir: 10%

Harvest destemmed and crushed.
Long maceration of 30 days. Aging in new oak barrels, 1 wine and 2 wines for 12 months.

Dress: Intense cherry red dress with a slightly tiled fringe.
Nose: First nose with a southern accent, black fruits are mixed with notes of garrigue and tapenade. The agitation reveals the red plum with spicy notes of black pepper and cloves.
Palate: Ample and generous at the same time, smoky and woody notes accompany the black fruits. A beautiful acidity accompanies the lovely flaky tannins of the Mourvèdre.

Service: Serve around 15°C. Open 30 minutes before serving for full aromatic expression.
Pairings: To be eaten with rare red meats (Rossini beef steak) or in sauce. In a few years, on stew game.
