The Collioure and Banyuls Vineyard is located in the far south of France at the meeting point between the Pyrenees and the Mediterranean, under the midday sun. The vines are planted on terraces on shale hillsides, from the seaside to the bottom of the valleys of the hinterland.

Black Grenache: 100%

Harvesting overripe grapes. Destemming, crushing.
Mutation on grains followed by a long maceration of 20 days.
Aged for 12 years in small foudres and demimuids, then bottled in an underground cellar. Depending on the cellar master's discretion, some vintages may not be produced.

Color: Intense with a gradient from the middle to the edge of the glass from mahogany to amber and yellow.
Nose: Initial nose in a world of dried fruits (currants), star anise and ground coffee. Aeration reveals a remarkable complexity: caramel must, cocoa and roasted coffee, dried banana, gentian, burnt caramel and a hint of rancio (walnuts).
Palate: Smooth and racy at the same time, this remarkable wine knows how not to be forgotten.

Serving: Serve between 15 and 16°C.
Pairings: A wine for meditation par excellence, accompanied by coffee or a cigar, it will enhance a pan-fried foie gras or a walnut cake.
