Blending rosés, an art mastered to perfection by our cellar master!
After the excitement of the harvest in the cellar, winemaking is in full swing! THE new vintages 2023 are in full preparation and our Collioure rosés reveal a concentration of brilliance and aromatic expression .
Every year at this time, Jauffrey Canier, our cellar master, and his assistant, Olivier Gisbert, are embarking on meticulous work to develop our new vintage of Collioure rosé . During the harvest and vinification period, pre-assembly work is carried out in order to preserve all the beauty of the aromas and not to weaken them. The grape varieties are carefully selected with criteria of color, aroma, mouthfeel and even sweetness.
During blending at the end of October, our cellar master tastes all the grape varieties again and rigorously notes the essential characteristics of each wine. This expert work then leads to a simulation. He then mixes different grape varieties in carefully measured proportions, seeking the best complementarity. The rosé samples thus assembled will be tested a few days later to retain only the most exceptional ones.
