Wine & Gastronomy: the marriage of two French know-how
A true symbol of French gastronomy, knowing how to pair food and wine is a culinary art ! At Terres des Templiers, we master the production and aging of wines appellations of controlled origin Collioure, Banyuls and Banyuls Grand Cru as well as Banyuls vinegar. It is our desire to enhance these local products by combining with choice gastronomy for harmony creating an explosion of flavors in the mouth.
The success of a food and wine pairing requires the association of a dish with the wine in the glass but also the creation of the recipe itself.
The project for this recipe booklet was then built on a passionate collaboration between the Christian Bourquin Professional Hotel High School in ArgelĂšs-sur-Mer and our cellar under the 5 discerning senses of our oenologist and cellar master.
A revisit of traditional Catalan local flavors mixing the specters of tasting... this was the common thread of the First year students in the BAC Professional Cuisine and Restaurant option , accompanied by their four teachers with distinct specialties: Ms. Chaudoir, professor of Applied Arts; Ms. Sanac, professor of Applied Sciences; Mr. Vidal, service professor and Mr. LĂ©ger, cooking teacher and project leader.
This partnership growing, the actors of this project then took part in the âmasterpieceâ , showing curiosity and daring by going from agreements of similarity to agreements of contrast while playing on the intensity of the dishes and wines.
We had only one interest: to magnify a common terroir with infinite potential that inspires us every day.
The result of these 18 cooking recipes is the reflection of painstaking, long-term work in which these gourmets invested for 1 year during their school career. Starters, main courses, cheeses and desserts have been worked until the success of an obvious symbiosis between these dishes and wines .
From this collaboration to the kitchen, there is only one step! We invite you now for a journey of the senses through these recipes and thus discover in your turn the rich palettes of flavors, aromas and textures with a resolutely Catalan accent which have won us over...
