The Cru Vineyard of Collioure and Banyuls is located in the far south of France at the meeting point between the Pyrenees and the Mediterranean, under the midday sun. The vines are planted on terraces on shale hillsides, from the seaside to the bottom of the valleys of the hinterland.

Black Grenache: 100%

Harvesting of over-ripe grapes. Destemming, crushing. Mutage on grains followed by a long maceration of 15 days. Aged for 10 years in ½ muids indoors, giving it its character traits thanks to a high oxidation linked to this small container. A refinement in the bottle has perfected its refinement.

Color: Superb amber, copper color with emerald green fringe.
Nose: Intense caustic wax, mocha and praline. When swirled, the rancio flies away, the nut is accompanied by menthol for our greatest pleasure.
Palate: Very aromatic and rich, first of all the honey candies and dried apricots bring a delicious touch, then the milk jam and walnuts prolong the finish with an assertive rancio, signed Terres des Templiers.

Service: Serve between 15 and 16°C.
Pairings: The meeting of Creation and the world of pastry seems obvious, more particularly when praline is highlighted as for example in a Paris-Brest.
