Suggestions for appetizers for Christmas or New Year:
For an aperitif, lovers of traditional dishes can opt for foie gras canapés with red onion confit and pink berries, accompanied by a Banyuls Ambré Roumani Doré served between 8 and 10°C. For fans of soft cheese, we recommend mini-soufflés with Bleu d'Auvergne cheese garnished with crushed walnuts, an excellent pairing with our Banyuls Rimage Mise Précoce (to be enjoyed between 14 and 16°C).
As an aperitif, it's the perfect time to add a festive touch to our Terres des Templiers vintages by revisiting them in cocktails. We suggest the recipe for our Coup de Foudres cocktail with its delicate bitterness:
In a shaker, add ice cubes and pour in:
1cl of Yuzu syrup,
3cl of grapefruit juice,
7cl of Banyuls Traditional Old Reserve ,
Grapefruit zest,

Offer your guests skewers made up of scallops, prawns and sliced ââleeks, harmoniously combined with a Collioure Blanc Les Schistes de Valbonne to be enjoyed at around 10°C after aerating in a carafe for around 5 minutes.
Savor the essential oysters, revisited with lemon and poached with endives, delicately paired with a Collioure Blanc Madeloc at a temperature of around 8°C.
Enhance your table with a gravlax salmon and its dill sauce, a perfect match with the Collioure Rosé Cuvée de la Salette at a temperature of around 10°C.

For the Main Course:
For your feast, we have developed several suggestions for dishes that are both simple and steeped in tradition:
A duck breast with honey and rosemary, enhanced by our 5-year-old Banyuls Vinegar for deglazing, which will find perfect harmony with our Collioure Rouge Saint-Michel to be enjoyed at around 14°C.
The essential pan-fried foie gras, elegantly accompanied by a Banyuls Grand Cru Président Henry Vidal , to be served between 14 and 16°C for an exceptional gastronomic experience.
Enjoy a monkfish blanquette flavored with saffron, with our Collioure Blanc Premium 2022 , to be enjoyed at a temperature between 10°C and 12°C.
Finally, the traditional and long-awaited Christmas capon will pair magnificently with our Collioure Rouge Premium , to be enjoyed at a temperature of 16°C, after being uncorked 10 minutes earlier.

Continue your holiday meal with a carefully composed cheese platter. It is essential, once again, to diversify the pleasures in order to satisfy both novices and connoisseurs. Thus, we recommend an assortment of cheeses with textures that are both firm and soft:
Roquefort, enhanced by a Banyuls Rimage Mise Tardive (to be enjoyed between 14 and 15°C).
A goatâs cheese, in perfect harmony with a Banyuls Rimage Terres des Oms Bio (served at around 15°C).
Comté, combined with a Collioure Blanc Madeloc (at a temperature of around 8°C).
Let's not forget the classics such as Saint-Nectaire, Camembert, or Brie. These cheeses can be presented with dried fruits such as dates, raisins, figs, as well as oilseeds such as walnuts, hazelnuts and almonds, for a most original presentation.

An Intense Dark Chocolate and Coffee Chips Yule Log, a must-have combining the intensity of dark chocolate with coffee aromas, enhanced by a Banyuls Grand Cru La Serra to be served between 13 and 14°C.
A citrus Bavarian cream or a revisited log in the style of lemon meringue pie with a Banyuls Rosé Au Coeur du Sein to be enjoyed between 8 and 10°C.
